Cal can't unlock or use a red lightsaber in the game; this is because Star Wars Jedi: Fallen Order is a canonical story within the Star Wars universe, and while an RPG may allow players to use a red lightsaber color for fun, that would mean giving Cal the chance to wield a red lightsaber.

You access the journey+ mode only after you beat the game once. Afterward, you can access the Journey+ mode and when you play it, you can alter your character’s outfit and even the set the lightsaber color to red. You get access to the Inquisitor outfit, mix it with the red lightsaber and you at least pretend to be on the Dark Side.
Just as fans are able to choose the color of Cal’s saber in Jedi: Fallen Order, the fans can change the color of the Legacy LIGHTSABER Blade (sold separately) with the push of a button. The blade can change to many different colors including Blue, Green, Purple, Yellow, White or Red.
Force Slow guarantees your next attack will get past their guard, and Lightsaber Throw does good damage and knocks the enemy down, allowing you to get a follow up attack. Plus, if you use it close enough, it will hit the enemy twice; once on the way there, and once on the way back.
